My chosen book (not a novel) is about color:
Bright Earth: Art and the Invention of Color by Philip Ball
it's a bit of a heavy read but full of fascinating facts.

If you're interested in the history, mythology and science of color but
appreciate an easier read with lots of anecdotes, I'd also recommend
Color: A Natural History of the Palette by Victoria Finlay.
